Meatless Monday: Tasty Lately Recipes Round-up



Here are some of the tastiest vegan and vegetarian recipes Richard and I have tried lately.

Broccolini & Tofu Stir-fry and then Southwest Tofu Tacos via Prep Once, Cook Twice article in Whole Foods Market North Atlantic magazine Spring 2014 issue.

Broccoli and Macaroni in Hickory Cashew Cheeze Sauce. The cashew cheeze sauce recipe I used was from The Ultimate Uncheese Cookbook.

"Dang delicious" cheezy broccoli bake following a recipe by The Seasonal Diet.

Yes, I love all things broccoli. I swear I eat other stuff too. Friday night I had Stuffed Ranchero Sweet Potato via Food Heaven Made Easy with Wendy & Jess, topped with Cashew Sour Cream via Whole Foods Market.

I'm taking The Seasonal Diet's Sprung4Spring challenge. Day 1 challenge was to include berries in lunch. I was happy to have an excuse to make the best fruit salad in the history of both fruit and salad.

This isn't exactly a recipe, but avocado on toast with sea salt and fresh ground pepper is becoming my favorite simple breakfast. It pairs nicely with a hard boiled egg (from pasture-raised hens) too.   

Banana bread with chocolate chips via How It All Vegan! I love the sweet bread recipes in this book! I've never had one do me wrong.

Healthy Chocolate Chip Blondies (with Beans) via Chocolate Covered Katie. I'm not 100% in love with this recipe, but it's very interesting. I'd totally try it again with a few tweaks.
